Oven Temp ~ 375° and 425°
Bake Time ~ 25 minutes / 10 minutes
Pan Type ~ 9" springform pan

Preheat Oven.
In a medium bowl combine the graham cracker crumbs, butter and sugar. Mix well and press into the bottom and 1 1/2“ up the sides of the pan. In a large mixing bowl beat the softened cream cheese, cocoa and first amount of sugar until fluffy.
Add the eggs one at a time beating well after each addition.
Fold in the vanilla and mini chocolate chips.
Pour into pan on the crust and bake for the first amount of time at 375°.
Remove from the oven and let cool on wire rack for 15 minutes.
Increase the oven temperature to 425°.
In the meantime combine in a small bowl the sour cream second amount of sugar and vanilla.
Mix until smooth.
Spread on top of cheesecake and return to oven to bake for the second amount of time.
Place on wire rack to cool to room temperature. Refrigerate for 6 hours or overnight.
Before serving spread top of cake with the cherry pie filling.
