Chocolate Cake Recipes

Chocolate Swirl Coffee Cake

With Orange Glaze

1 1/2 cups
3/4 cup plus 2 Tb
2 1/2 tsps
3/4 tsp
1/4 cup
2 eggs
2/3 cup
1 tsp
3/4 cup
1/2 cup
1/4 cup
3Tbs
All-purpose flour
Sugar
Baking powder
Salt
Shortening
Slightly beaten
Fresh orange juice
Orange peel -- grated
Confectioners' sugar
Chopped nuts
Cocoa
Melted butter


Oven Temp ~ 350°
Recipe Bake Time ~ 35 to 40 minutes
Pan Type ~8" square pan


Preheat oven 350 F. Grease pan.

Combine flour, sugar, baking powder and salt in mixing bowl; cut in shortening with pastry blender until mixture resembles coarse crumbs.
Add eggs, orange juice and orange peel; stir just until blended.
Set batter aside.
Combine confectioners' sugar, nuts and cocoa in small bowl; stir in melted butter to form a crumb mixture.
Spread 3/4 cup batter evenly on the bottom of pan; sprinkle half the crumb mixture over batter.
Spread with 1 cup batter, sprinkle with remaining crumb mixture, and cover with remaining batter.
Bake for allotted time, or until toothpick inserted in center comes out clean.
Cool slightly; spread chocolate swirl coffee cake with Orange Glaze and serve warm.


Orange Glaze

1 cup confectioners' sugar
2 tablespoons fresh orange juice
1/4 teaspoon orange peel -- grated
Combine ingredients in small bowl; blend until smooth.
