Moms Chocolate Coffee Cake Recipe

1 cup
1/3 cup
4 eggs
2 cups
2 cups
1 tsp
1 tsp
1 3.9 oz. pkg
1 cup
1 Tb

Softened butter
Cocoa powder
Beaten
Sugar
All-purpose flour, divided
Vanilla
Baking soda
Instant chocolate pudding
Milk
Confectioners' sugar

Oven Temp ~ 350°
Bake Time ~35 minutes
Pan Type ~ 9" x 13" pan


Preheat oven to 350° F. Spray pan with cooking spray.

Melt butter and stir in 1/3 cup cocoa and let cool.

In mixing bowl, mix eggs, 2 cups sugar and 1/2 cup flour.
Add the cocoa mixture to the egg mixture.
Add in the remaining flour.
Add vanilla, baking soda, pudding, milk and beat well.
Bake for allotted time or until nothing sticks to inserted toothpick.
When cool, you can lightly dust cake with 1 tablespoon confectioners' sugar.
Serve mom's chocolate coffee cake warm or cold.
