Rich Chocolate Cake Recipe

The coffee is what gives this chocolate cake it's deep rich flavor.
1 cup
1 cup
3/4 cup
1 cup


3/4 cup
2 Tb
2 tsp
2 large

Unsalted butter, melted
Quality dark chocolate, broken
Superfine sugar
Hot espresso coffee or (one cup of hot water with a couple
of spoonfuls of instant coffee dissolved)

Self-raising flour
Cocoa powder
Vanilla
Eggs


Oven Temp ~ 375°
Recipe Bake Time ~ 35 minutes
Pan Type ~ 9 inch cake pan


Preheat oven, Spray the pan with non-stick vegetable spray.

Mix the butter, sugar, chocolate and coffee in a food processor until well blended: the sugar should be dissolved, the chocolate well melted, but it doesn't matter if there are still some solid chocolate pieces.
Add the flour, cocoa powder, vanilla and eggs, and process until smooth.
Pour into prepared cake pan, and bake until done.
Serve frugally, it is very rich.

If you are serving it as a dessert, rich chocolate cake should be lightened with a fruit sauce.
Maybe served with orange or other flavored sorbet.
